Seen from the sky, Le Chalet de la Forêt looks like a large bourgeois residence on the edge of the Forêt de Soignes. A unique place, an exclusive gastronomic entity, a link between the city and its outskirts, that its chef-owner, Pascal Devalkeneer, has been dreaming of and creating, stone by stone, dish by dish, for over twenty years. After acquiring a second Michelin star in 2012, his establishment is now part of the very select club of the Grandes Tables du Monde and Relais & Châteaux. A recognition for this self-taught chef, who, even in the forefront of Brussels gastronomy, never is ostentatious or avant-garde at any cost, but rather in a discreet and constant quest for accuracy, for balance between cuisine and nature, between the plate and its surroundings.
